Ask a foreigner about Indian cuisine and the first adjective that springs to their mind will be ‘spicy’. It’s true; we Indians do love our spices. A pinch of turmeric, a dash of chilli powder and some coriander powder can instantly turn a dish from bland and boring to one that is packed with flavour. However if you don’t understand spices, just adding them randomly to a dish can result in disaster; a completely inedible meal.
Luckily, Eater has published a video that has Padma Lakshmi explaining the flavours and uses of common Indian spices. Considering that Lakshmi is a chef of international acclaim who has also appropriately acted in Paul Berges’ ‘The Mistress of Spices’, her word in the matter will be extremely helpful.
