It’s not called the most wonderful time of the year for nothing! The 12 days of Christmas have begun, and Smoke Co. is kicking off the celebrations with a Christmas menu that you’ll definitely want to come back for, again and again, from the 12th of December 2018 to the 2nd of January 2019.
Among the appetizers you have the Burrata with honey glazed spiced squash with some cranberries, bacon and walnuts. What does a plate of bacon strips with a soft boil egg need to complete it? Some truffle flavouring, of course! And that’s what the Bacon and Egg appetizer is. Round things off in this department with the Grilled Quail which has a marinade of chipotle and Mangalore jaggery glaze that is stuffed with bread, bacon and dry fruits, and served up with some root veg on the side.
For the mains, you have some brilliant choices – the Cassoulet is a slow cooked casserole with Andouille sausage, white beans mirepoix and ham hock. The Smoked Ham and Prawn Etouffee has parsley rice that is paired with quite a spicy Cajun stew of smoked ham, prawn and peppers. The Braised Beef Cheeks embody the goodness of Christmas – some red wine braised beef cheeks, with truffle potato puree, asparagus and gremolata.
And what is Christmas without a roast – the Half Roast Chicken here comes with a bread stuffing and some cranberry sauce on the side. The Christmas baked Ham is smoked and has grilled pineapple, roasted potatoes and a honey mustard sauce.
The indulgence of Christmas is never complete without desserts – the Four Textures of Chocolate brings white, milk and dark chocolate in a range of textures together. The Steamed Christmas Pudding is moist and potent sponge of macerated dry fruits with toffee sauce and flambéed brandy, while the Egg Nog Parfait adds a layer of homemade custard ginger cookies to the classic drink.
