Set dosa, a popular breakfast served in most fast food joints or tiffin centers in Bangalore and other parts of Karnataka is a set of soft and thick spongy dosas served together with coconut chutney and sagu.

This set dosa recipe can even be used to make dosas without oil on a nonstick tawa. So get set cooking!

Instructions
  1. Wash rice and soak in ample water for about 5 hours.
  2. Wash and soak urad dal and fenugreek seeds for about 5 hours as well.
  3. Wash poha just before grinding the batter.
  4. Add urad dal, salt, fenugreek seeds and aval to a blender along with 1 cup water and blend till bubbly. Transfer the batter to a large bowl.
  5. Add rice to the jar along with ¼ cup water. Grind to a smooth batter.
  6. Pour this to the urad dal batter. Mix everything well till well combined.
  7. Set aside in a warm place for 8 to 12 hours for the batter to ferment and rise well.
  8. Heat a tawa and pour a ladle full of batter and dab it gently in to spread the batter. Add oil at the edges.
  9. Cover and cook for a while until it is cooked through.
  10. Sprinkle spice powder and serve hot with chutney.
