Ruby Chocolate Is Here, And Yes, It’s Pink!

Since the dawn of time (or since mum let us eat chocolate) there have been three staple flavors to choose from: milk, dark, and white. However, this is 2017 (and Trump is president) so scientists at Barry Callebaut have done the impossible, they’ve discovered a new type of chocolate – aptly named, ruby chocolate – so, now our choices have increased to four (the more the merrier).

Ruby chocolate was launched in Shanghai and according to reports, it’s the first new variety of chocolate that food scientists have released in 80 years, when white chocolate was launched. Apart from the fact that a new variety of chocolate is to be celebrated, what has really gotten the internet in a tizzy is the color of ruby chocolate. It’s millennial pink and looks absolutely scrumptious.

You may recollect that pink chocolate has been doing the rounds in the recent past. However, unlike the other chocolate you may have seen, which is white chocolate dyed pink, the hue from ruby chocolate is au natural!

According to the press release on Barry Callebaut’s website, ruby chocolate is made from the ruby cocoa bean, which produces red cacao powder. Wondering what it tastes like? Well, it has been described as “an intense sensorial delight,” and it’s “not bitter, milky, or sweet, but a tension between berry-fruitiness and luscious smoothness.” We honestly can’t wait to welcome ruby chocolate into the subcontinent!
