Exotic Spanish Paella!
Take 2 tbsp olive oil in a mixing bowl and stir in paprika, oregano, and salt and pepper.
Add chicken pieces and toss to coat.
Cover this with a cling film and refrigerate.
Heat 2 tbsp olive oil in a large pan and add garlic, red pepper flakes, and rice.
Stir to coat the rice with the oil and cook for about 3 minutes on medium heat.
Add saffron, bay leaf, parsley, chicken stock, lemon zest and stir.
Bring the mixture to a boil, reduce the heat and cover the pan.
Simmer the paella for about 20 minutes.
In a separate pan heat 2 tbsp of olive oil.
Cook the chicken and onion over medium heat for 5 minutes.
Add bell pepper and sausage and again and continue cooking for 5 minutes.
Add the shrimp and keep turning them till both sides are pink in colour.
Once the rice mixture is ready, spread over the serving plate and top it with sea food.
