Yam & Raw Banana Bonda Recipe

Usually made of mashed potato seasoned with salt, some mustard oil and shopped onions, a bonda (also known as vada) is snack commonly eaten in Southern India. The dish comprises the mashed potato coated in a thick gram flour batter and then deep fried.

The filling of the bonda varies from one region and household to other. This yam and raw banana bonda is one such special variation. Here’s how you can make some.

Instructions
To make the filling
  1. Peel the skin of the raw banana and yam. Wash and chop them.
  2. Boil them in a vessel with water, salt and turmeric powder.
  3. Once the yam and raw banana become soft, drain the excess water. Mash them and keep aside.
  4. Crush the ginger, garlic, chili and coriander seeds.
  5. Heat 2 tablespoons of oil in a kadhai or wok and crackle the mustard seeds, cumin seeds and asafetida.
  6. Then add the crushed garlic, ginger, chili and coriander seeds and sauté for a minute.
  7. Add the mashed raw banana and yam.
  8. Add the lime juice and coriander leaves. Mix well.
  9. Make medium lemon sized balls out of it. Keep it ready and prepare the batter.
To make the batter
  1. Sieve the gram flour and mix with it the rice flour, asafetida, chili powder, carom seeds and salt.
  2. Add water gradually and make a smooth batter. The batter should be thick enough to coat the vadas.
To make the bondas
  1. Dip the filling balls one by one into the batter and coat them evenly.
  2. Deep-fry them on medium flame till golden brown.
  3. Serve with preferred chutney or ketchup.
