Instructions
  1. Pierce the boiled eggs with a fork so that the flavours sink in.
  2. In a mortar and pestle crush the cashews to a powder and soak sometime in water.
  3. Make a paste of the cashews by blending the water and cashews together.
  4. Heat oil in a medium pan and add cumin.
  5. Once the cumin aroma can be felt add the bay lead, cardamom and cinnamon stick.
  6. When the spices start to splutter, add onions and salt.
  7. Keep cooking and stirring till the onions caramelise.
  8. Add ginger garlic paste and saute it with the onions.
  9. To this, add the tomatoes and once they cook add chili powder, turmeric and garam masala.
  10. Stir it in and let masala leave its aroma.
  11. Add the cashew paste, mix and let the gravy simmer.
  12. Put the eggs in once the gravy is cooked along with coriander and cook for two minutes.
  13. Add water to adjust consistency and simmer the egg curry till the gravy is thickens.
