‘Waitress’ Marshmallow Mermaid Pie Recipe

Waitress was one movie that has made it to all the foodies’ and pie lovers’ ‘favorites’ library. One can go through the movie n number of times and still drool the next time it’s on. Courtesy Jenna’s mind-blowing pies.waitress2

Here’s another recipe from the movie. The Marshmallow Mermaid Pie was the one Jenna brought for her doctor, Dr. Mueller, who happened to be on semi-retirement already. She eventually gave it to the junior intern, Dr. Pommater. On their next meeting, Dr. Pommater exclaims, “that pie was biblically good, that’s how good it was!” Lets see for ourselves, shall we?

Instructions
  1. Preheat oven 375.
  2. Combine coconut and graham crackers in food processor until till coarse crumbs form.
  3. Mix together the crumbs and butter with a fork.
  4. Press to bottom and sides of 9-inch pie pan and bake for 10 minutes.
  5. Let the piecrust cool down completely.
  6. Heat marshmallows and milk in a saucepan over low until smooth stirring constantly. Remove saucepan from heat and allow it to cool.
  7. In a large bowl beat cream till stiff peaks form.
  8. Fold marshmallow mixture into whipped cream with grated chocolate.
  9. Spoon out the filling into cooled crust and refrigerate for at least 3 hours.
  10. Top off with marshmallows and colored sprinkles.
  11. Serve!
