‘Waitress’ Bad Baby Pie Recipe

The movie Waitress must be lauded a thousand times and then some more for the brilliance of its pies. And the brilliant execution of the backstory of each one of them. The movie starts with Jenna finding out she’s pregnant with her, well, unwanted husband’s baby. And what do you think she does to put off the tension? She thinks of baking a new kind of pie of course!

This one’s called the ‘Bad Baby Pie’ because ‘I Don’t Want Earl’s Baby Pie’ simply cannot go up on the specials menu! The pie is savory dish with cheese and smoked ham, which makes for a perfect lice at brunch or breakfast. Here’s the recipe to Jenna’s dilemma pie.

Instructions
  1. Preheat oven to 400 degrees.
  2. Cover piecrust with foil and bake for 10 minutes. Remove foil and bake 5 minutes more. Remove crust and reduce heat to 325 degrees.
  3. Julienne ham. Chop green onions.
  4. In a skillet, sauté ham until brown. Remove and set aside.
  5. Sauté onion until tender. Remove with slotted spoon and combine with ham.
  6. Spread the ham and onion on the bottom of pie crust.
  7. Cover the ham mixture with brie and sprinkle with parmesan.
  8. Combine eggs, cream and nutmeg; pour over cheese. Bake 30 minutes or until set. Cool slightly, cut into wedges and serve.
