Vendhaya Kali Recipe
A very cooling and healthy sweet, Vendhaya Kali is a popular treat in villages around Tirunelveli. It is a perfect sweet for a sunny day, to bring down the body’s temperature,
  1. Wash and soak the urad dal, raw rice and fenugreek seeds in water for around 2-3 hours. Grind this soaked mixture and set aside.
  2. Heat together the water and jaggery till the jaggery melts. Do not let it thicken into a syrup. As soon as the jaggery melts, take it off the flame and strain it, as the jaggery will contain impurities.
  3. Put the jaggery solution back on the stove, and as it heats, add the ground rice, fenugreek and urad dal mixture to it. Make sure the flame is low and keep stirring continuously to combine it.
  4. When it starts to thicken, you can add the salt. and the coconut oil little by little. Keep stirring.
  5. When it starts to solidify, take it off the stove and pour it onto a pan or tray to set. Add the grated coconut on top, and let it cool. Once it cools and hardens, you can cut it into squares or any other desired shape and enjoy.
