Instructions
  1. Heat a large skillet over medium-high heat. Coat pan with cooking spray.
  2. Add onion, garlic, jalapeño, and mushrooms and sauté for 5 minutes, stirring occasionally.
  3. Gradually add spinach; cook for 1 to 2 minutes, stirring until wilted.
  4. Stir in lime juice, salt, and cumin.
  5. Add rice and beans and stir constantly for 1 minute or until thoroughly heated. Add cheese, stirring until melted.
  6. Warm tortillas according to package directions.
  7. Spoon about 2/3 cup mushroom mixture down center of each tortilla and roll up.
  8. Serve with salsa, if desired.
