V for Valentine
Super easy on a whole new level. So moist and chocolate-y.
  1. Preheat oven to 350 degrees and line 18 regular sized muffin tins with cupcake liners. Set aside.
  2. Sift together dry ingredients- flour, granulated sugar, cocoa, espresso powder, baking soda and salt
  3. Add the chocolate chips and whisk into the mixture; set aside.
  4. Whisk together all wet ingredients: water, oil, molasses, and vanilla.
  5. Stir wet ingredients into the dry, be careful not to over-mix
  6. Use an ice cream scoop to fill cupcake liners about halfway (about 1/3 cup of batter per cup)
  7. Bake cupcakes for 8-12 minutes or until a knife comes out clean.
  8. Allow to cool on a cooling rack.
  9. Sprinkle confectioners’ sugar before serving.
