Veg Kabab in the broader spectrum of the word includes any and every kabab fit for consumption by a non-meat eater. This could include veg seekh, veg galouti, veg shami, hara bhara kababs, and the list can go on endlessly. Because even the term ‘veg’ encompasses a wide array of ingredients that go fro desi varieties like paneer, potato, and jackfruit to more continental ones like mushroom, cheese, tofu, and more. But we’ll put all the confusion aside and make the kebab that comes closest in meaning to a “veg kabab”.

The dish is a delicious baked or pan-toasted recipe that includes a number of healthy and delicious veggies. Basically, the veg kabab is as healthy and nutritious as a kabab can get! To whip up a batch tonight, follow the step-by-step instructions below.

Instructions
  1. Rinse and dice the vegetables.
  2. Make a fine mince – not paste – of the vegetables, coriander, and mint leaves in a blender.
  3. Take the minced veggies in a mixing bowl or pan and add ginger-garlic paste, turmeric powder, red chili powder, and garam masala powder. Mix well and keep aside.
  4. Heat a small pan and add 10 tablespoons besan in it. On a low flame, stirring often roast the besan till its color changes and it gives a good aroma.
  5. Now add the roasted besan to the minced veggie mixture and season with salt. Mix well.
  6. Then take a small portion of the mixture and shape into a ball. The kebab mix should be able to hold together when shaped into ball, otherwise add some more roasted besan.
  7. Flatten each ball and place them in a greased baking tray greased with oil.
  8. Preheat the oven for 15 minutes at 180 degrees celsius, before you place the kebabs in it.
  9. Once the kebabs are half baked, remove the tray from the oven and brush the top of the kebabs with some oil.
  10. Now continue to bake till the kebabs are golden and slightly crisp.
  11. Serve hot with chutney or ketchup.
Recipe Notes

Alternatively, you can even fry the kababs instead of baking. Just heat 2-3 tablespoons oil in a pan and pan-fry them on a low to medium flame.
When one side is golden and browned, gently turn over and fry the second side. Flip once or twice and fry till the kebabs are golden and crisp.
Place the kebabs on kitchen paper towels to absorb excess oil.
Serve.
