Yummy Lemon Cupcakes!
Keep the oven for preheating at 350°F.
Add flour, baking powder and salt to a bowl and sift it thrice.
Now in another bowl put eggs and sugar together and whip using a hand blender till you get a fluffy texture.
Add the oil, lemon juice and zest then whisk some more.
Fold in the flour mixture and mix it well.
Pour the batter in lined cupcake moulds and bake for about 20 minutes.
Meanwhile get the frosting ready beginning whipping the cream cheese till it is smooth.
Add the butter and whip once again.
Incorporate powdered sugar and whip till you see soft peaks.
To this, add lemon juice, lemon zest and yellow food color, then whip for half a minute.
Cover the bowl using a cling film and refrigerate for half an hour.
Once the cupcakes are baked and cooled plus the frosting has refrigerated for a while, pipe it on to the cupcakes and enjoy!
