Halwa
Halwa comes to those who wait. It also has its own way of telling us, “When all else goes wrong, hold on, Halwa is coming”. Especially when ghee is oozing all over the place, hang in there.

Instructions
  1. Add the wheat flour to a large mixing bowl.
  2. Pour in 2 cups of water, little by little and mix to form a smooth, dilute batter. Make sure there are no lumps.
  3. Heat 2 tbsp of ghee in a pan. Add the wheat flour.
  4. Stir well on low, the batter will thicken.
  5. Once the batter seems thicker than before, add a tbsp of ghee and stir.
  6. Repeat this process until all but two tbsp of the ghee is incorporated. The entire thing should take 12 minutes.
  7. Add in the sugar, stirring.
  8. Add the nuts and the cardamom.
  9. Add the remaining ghee and stir until it seems as though the halwa is oozing ghee.
  10. Next, the halwa starts moving away from the sides of the pan- make sure it slides off the spoon. Remove from heat.
For the colouring
  1. In a separate pan, heat the ghee.
  2. Add sugar and stir until the sugar caramelizes.
  3. In a minute, the ghee will turn a good brown.
  4. Pour this to the Halwa and mix well.
