Gathi-yum!

Deep frying gram flour may not sound as a tempting idea, unless you do it like a Gujarati. They call it gathiya, which is essentially deep-fried strings of gram flour dough spiced with carom seeds, black pepper and chili powder.

The snack is great for munching away during your midnight hunger pangs or simply stuffing your face as you down your daily dose of tea. Use this recipe to make yourself a boxful at home.

Instructions
  1. Sieve the besan in a large bowl.
  2. Mix together the besan, carom seeds, red chili powder, turmeric powder, black pepper powder, baking soda, 1 teaspoon cooking oil and salt.
  3. Knead the mixture into a smooth dough using a quarter cup of water.
  4. Place the dough into a sev machine and close tightly.
  5. Heat oil in a heavy bottomed pan (kadhai) over medium flame.
  6. Hold the machine above the kadhai and roll out the dough moving your hand in circular motions over the wok.
  7. Fry till the strands turn golden brown, about 2-3 minutes.
  8. Remove the gathiya using a strainer and drain on a kitchen towel. Use the same process for the rest of the dough.
  9. Serve immediately or store in an airtight container.
