Instructions
  1. Soak the skewers in ice cold water.
  2. Whisk the ingredients for the marinade together and pour it over the chicken.
  3. Knead the marinade into the chicken.
  4. Cover the chicken and marinade overnight.
  5. Coat a grill rack with non-stick cooking spray.
  6. Skewer the cubes onto the skewers (6-8 on each one) and grill for eight to ten minutes.
  7. Meanwhile, combine the ingredients for the sauce and cook it over medium heat for three minutes.
  8. Remove the skewers from the grill and allow them to cool.
  9. Serve the skewers with the sauce as a dip.
