Thai Fried Prawn & Pineapple Rice Recipe

Instructions
  1. In a wok, heat oil and fry the spring onions. Add pepper and the pineapple and stir for about 5 minutes. To the wok, add the green curry paste and light soy sauce. Mix well.
  2. At this point, add the rice and stir. Make a well in the wok and add the beaten eggs and scramble them.
  3. Add peas, drained bamboo shoots, prawns and stir well. Season again and cook until the prawns are tender. Add more spring onions, lime juice and garnish with coriander. Mix well and serve hot!
