Mix baked sweet potatoes with delicious salad dressing for this healthy sweet potato salad.

For the sweet potatoes
  1. Preheat oven to 200 degrees Celsius.
  2. Toss chopped sweet potato in 1 tbsp olive oil.
  3. Spread the potato chunks on a baking tray lined with a baking sheet.
  4. Roast for 30 – 35 minutes until golden.
  5. Allow to cool.
For the dressing
  1. Using a hand held whisk, gently whisk together the onion, spring onions, chives, sherry vinegar, olive oil and honey.
  2. Mix the cooled sweet potatoes and dressing together using your hands.
  3. Serve!
