Name: Sun-Dried Tomato Salsa
Ingredients: 3/4 cup sun-dried tomatoes (drained, and finely minced, 180 ml, in oil); 2 anchovy fillets (drained and finely minced, in olive oil); 1/2 cup extra-virgin olive oil (118 ml); 1 tsp finely minced garlic (5 ml); 2 Tbsp finely minced roasted shallot (30 ml); 2-1/2 tsp finely minced fresh thyme leaves (12 ml); 4 tsp finely minced fresh basil leaves (20 ml); 1 Tbsp finely minced fresh Italian parsley (15 ml); pinch Largeof cayenne powder; 2 tsp freshly ground black pepper (10 ml); 1 tsp sherry vinegar (5 ml)

Thoroughly combine all the ingredients together in a mixing bowl.
