Sukha Aloo Recipe

It doesn’t sound like much and it probably doesn’t look like much either, but Sukha Aloo is a dry potato preparation that is heavily based on spices. You can add all the spices that you wish, mix them up nicely with the potato and cook it all together. You can also either choose to fry the potatoes to a crisp or just cook them till they are half-crisp, but still soft when you bite into them. The great thing about Sukha Aloo is that it can be eaten however you like. You can serve it during a party as finger food, because the spices with a drink would make a great combination, you can serve it as a snack during a movie watching marathon or even as a dish on the dining table during a meal. Whatever you’re in the mood for, Sukha Aloo can work that way.

Method
  1. Add the potatoes (with skin) into water with salt and turmeric powder and boil till soft
  2. Drain the potatoes and let them cool a little before you skin them, cut into smaller pieces
  3. Add oil to your pan, with the coriander powder and chilli powder, mix well
  4. When the oil is hot, add the potatoes into the pan and mix properly, coating the potatoes well with the spices
  5. Cover with a lid and every so often stir the potatoes
  6. When almost done, add the garam masala and mix it up nicely
  7. And just before you take it off the fire, add the dried mango powder and mix it properly
  8. Serve!
Recipe Notes

You can also use regular potatoes, cut them in whatever shape or size you'd like.
Smaller the pieces, the faster it will cook.
