Instructions
  1. Line two baking sheets with parchment paper and preheat the oven to 400°F.
  2. Take a stand mixer with paddle attachment and beat together the cream cheese, sugar, lemon juice, lemon zest and vanilla extract.
  3. Beat the mixture till you get a creamy consistency.
  4. On the kitchen work surface, dust a little flour and place the pastry sheets.
  5. Using a large cookie cutter, make four circles on each sheet.
  6. Put the circles on both the baking trays and keep them well apart from each other.
  7. Score the pastry around the border of 1/4 inch from the edges and then prick the centers with a fork.
  8. Put a little cream cheese mixture inside the border of each pastry and cover it with fresh fruit of your choice.
  9. In a bowl, whisk the egg along with one tablespoon of water.
  10. Give the pastry edges an egg wash and sprinkle the castor sugar.
  11. Bake the pastries for about 15-20 minutes till they turn golden and are puffed.
  12. Let the baked pastries cool on the rack for five minutes and then remove it and cool completely before serving.
