Spinach-Lentil Soup Recipe

  1. Heat olive oil in a large pot. Add onions, celery and carrots. Cook until the veggies soften. At this point, add cumin, garlic, coriander and red pepper flakes and mix well. Season.
  2. To the pot, add tomatoes, thyme vegetable broth and lentils. Bring to a boil and reduce the heat. Cover partially and let it simmer for a good 20 minutes.
  3. Add spinach and mix well. Cook for 2 minutes and season. Serve warm.
