Instructions
  1. In a bowl, combine all the ingredients for the spice mix.
  2. Salt and pepper the lamb racks and set aside.
  3. In a large skillet, heat olive oil on high.
  4. Sear the lamb rack on each side for 3 minutes.
  5. Remove and bring it to room temperature.
  6. Rub in about 2 tbsp of the spice mix on the lamb rack.
  7. This can be done a day in advance before baking.
  8. For the sauce, combine brown sugar ad vinegar and bring it to a boil.
  9. Add a little red wine and the remaining spice mixture.
  10. Boil and stir till the syrup thickens.
  11. Add stock and reduce it to about 1 ½ cups.
  12. Season the jus if necessary.
  13. In a 400 F pre-heated oven, roast the lamb racks for 25 minutes until medium rare.
  14. Remove from the oven and let it rest for about 5 minutes before carving.
  15. Drizzle the sauce on top of the lamb before serving.
