    1. Heat oil in large pan over medium to high heat.
    2. Add the turkey and saute until completely brown, about 6-8 minutes, using a spoon to stir and break up the meat as it cooks.
    3. Drain the cooked turkey and then place the turkey into a slow cooker.
    4. Add all of the remaining ingredients except the toppings, and stir
    5. Cook on low for 6-8 hours, or on high for 3-4 hours, until the soup is cooked through.
    6. Serve warm, garnished with optional toppings if desired.
