Simple apple cake recipe
This is a great cake to make in a hurry with ingredients you are most likely to have handy, without a special trip to the shop! Serve warm with a dollop of cream for morning/afternoon tea, or with ice cream for a yummy dessert. Use fresh or tinned pie apples.

  1. Preheat the oven to 180° C (350 degrees F). Butter and flour a 22 cm ( 9-inch) pan and set aside.
  2. Peel, core and cut the apples into thin slices. Place in a large mixing bowl and toss with lemon juice to avoid discoloration. Set aside.
  3. Using an electric mixer, beat the eggs and sugar until pale and fluffy.
  4. Add the oil, half of the cream, flour, baking powder, and mix well.
  5. Add the remaining cream and mix again.
  6. Pour the mixture into the prepared pan.
  7. Arrange the apples slices over the top of the batter in a circular pattern.
  8. Sprinkle the apple slices with sugar, cinnamon and dot with bits of butter here and there.
  9. Bake for 45 minutes or until golden brown and a skewer inserted into the centre of the cake comes out clean.
  10. Cool before removing from the pan and dust with powdered sugar before serving.
  11. Enjoy your apple cake!
