  1. Peel and chop the mangoes.
  2. Heat oil and fry the phoran spices.
  3. Add ginger, mango pieces, red chilli powder, garam masala and asafoetida.
  4. Let the spices and the mangoes cook for two minutes.
  5. Turn off the flame and let the chutney cool down before serving.
