Instructions
  1. Take the warm milk in a bowl and add the yeast and a pinch of sugar.
  2. Let it become foamy which take about 5 minutes.
  3. Whisk 3/4 cup sugar, 2 eggs and egg yolks in a separate bowl.
  4. Add the yeast mixture and whisk it in.
  5. Combine flour and salt in a mixer.
  6. Add the egg mixture to it and beat it on a low speed.
  7. Once the flour incorporates, add 1 cup butter and switch to the dough blade.
  8. Beat the mixture to form a smooth dough.
  9. Put the dough on the work surface and knead with hands till you get a soft texture.
  10. Grease a medium-sized bowl with butter and toss the dough in it so that it coated.
  11. Cover the bowl with a cling film and put it in a warm place for about an hour till the dough doubles in size.
  12. Stir together the chocolate, remaining sugar and cinnamon in a big bowl.
  13. Add in the remaining butter and combine it well.
  14. Grease the loaf pans with butter and line them with parchment paper.
  15. Make an egg wash by beating the third egg with cream.
  16. Knead the dough a little and leave it on the surface for 5 minutes and then cut it into 3 equal pieces.
  17. While working with one piece, keep the remaining two covered in cling film.
  18. Roll out the dough to about 16 inch square and brush the edges with the egg wash.
  19. Crumble one-third of the chocolate filling evenly on the dough leaving 1/4 inch of the border empty.
  20. Roll the dough and pinch the ends to seal.
  21. Give 5-6 twists to the dough and brush the roll with egg wash.
  22. Crumble another 2 tbsp of the filling on the left half and fold the right half on top of it.
  23. Fold the ends and pinch to seal.
  24. Twist the roll twice and put it in the loaf tin.
  25. Make the other two loaves in the similar fashion.
  26. Heat the oven to 350°F and brush the loaf tops with egg wash.
  27. Crumble 1/3 of streusel on all three loaves and cover them loosely with cling film.
  28. Leave these in a warm place for half an hour.
  29. Now bake the loaves and rotate them halfway till they are golden in colour.
  30. Lower the temperature to 325 and bake till the loaves turn deep golden.
  31. Remove once done and transfer to wire racks till they cool down.
