Crispy & Delicious Masala Dosa!
Dice the potatoes in small pieces.
Heat oil in a wok and add mustard seeds.
Once the seeds start crackling, add hing, urad dal, chana dal and cumin seeds.
Saute this mixture till the lentils are lightly toasted and at this point at curry leaves, green chillies and cashew nuts.
Cook for two minutes and then mix in the onion.
Once the onion starts to become translucent add the salt along with the turmeric and mix well.
Cook for a minute and then add the water and let it come to a boil.
At this point add the potatoes and mix them in and mash up slightly.
Cook the potatoes for 5 minutes and at the end mix in the coriander leaves and keep the stuffing aside.
Now begin making dosas on a non-stick pan and once it is almost ready, put the masala in the middle and fold the dosa in half.
Serve the dosa hot and crispy.
