A Twist to the Vada
Crisp fried patties made with tapioca pearls, peanuts and mashed potatoes
Instructions
  1. In a bowl pit the sabudhana or sago in water and soak for 5 hours or overnight, if possible.
  2. Drain the water and then boil the potatoes. Peel and then mash them.
  3. Mix the mashed potatoes and sabudana well.
  4. On a skillet, roast the groundnuts/peanuts till they become crisp. Cool and then powder in a mortar-pestle or in a dry grinder.
  5. Now, add the peanuts, rock salt, sugar, ginger, green chillies, coriander leaves and lemon juice. Now miss the entire mixture well.
  6. Now take some portion of the mixture in your hands and shape them into flat round vadas or patties.
  7. Deep fry the sabudana vadas till golden brown.
  8. Serve sabhudhanas hot
