Preparation Method
  1. Pre-soak the tapioca pearls overnight or for about 3-4 hours before cooking to soften the pearls.
  2. Drain, pat it dry and set aside.
  3. Pre-boil the potatoes and chop them into sizable chunks.
  4. Grind the roasted peanuts coarsely and set aside.
  5. In a pan, heat oil and fry the cumin seeds till brown.
  6. Add the curry leaves, ginger and green chillies and cook for a minute or two.
  7. Once done, tip in the chopped potatoes and stir well.
  8. Add the sabudana and sauté till the pearls are translucent. Add salt and stir well.
  9. Add the grated coconut and sprinkle the coarsely ground peanuts and mix well.
  10. Add lemon juice to the pan and combine.
  11. Garnish with coriander leaves (optional) and serve hot!
