Instructions
  1. Heat the oil and add the chilies and fry for a minute until they turn aromatic.
  2. Remove the chilies and add the sliced shallots to the same pan. Fry until golden.
  3. Add the asafetida, garlic, and salt. Stir through and switch off the flame.
  4. Add the tamarind piece or paste in the end.
  5. Cool completely and grind with the chilies to a smooth paste.
  6. Store in a dry place.
