- 1 cup rava
- 6 tbsp ghee
- 1 cup sugar
- 2 cups Water
- 3 pinches of saffron threads
- 5 green cardamom pods
- ¼ cup chopped cashews

Instructions
- Using a mortar and a pestle pound the cardamoms into powder and set aside.
- Pound the saffron strands and set aside.
- On a low flame, heat up the ghee in a kadai.
- While the ghee heats, combine the sugar and water in pan and set it over a high flame.
- Add the powdered saffron to this mixture and allow it to come to a boil.
- Once it boils, lower the flame and let it simmer.
- Meanwhile, while waiting for the solution to come to a boil add the rava to the ghee, stirring constantly.
- Add the cashew nuts to the rava and keep stirring.
- Stir the rava and cashews until the grains change color.
- Once the grains change colour, pour in the hot sugar and water solution.
- Continue stirring the mixture until it begins to thicken, and coagulate in the center.
- Then, cover the mixture and switch of the flame, allowing the rava kesari to sit for five minutes.
