Pork Jadoh (or simply ‘jadoh’) is a rice and meat based dish widely loved and gobbled in Meghalaya. The preparation is made using short grain rice (locally called joha rice) and pork (usually it’s pork, other meats can also be used) slow-cooked in an array of delicious and mild spices. The end result is an aromatic rice preparation seeped with the smokiness of the pork and drenched in the richness of the spices and caramelized onions. Drooling yet? We are! Instructions
  1. Heat oil in a flat-bottomed vessel. Add the onions, ginger paste, turmeric and black pepper and fry till the oil separates.
  2. Burn the tip of the bay leaves and immediately drop in the pan. Add the pork pieces and fry for sometime till light brown.
  3. Add the washed rice and fry for 2-3 minutes. Add salt.
  4. Add 4 cups of water and simmer till cooked.
  5. Garnish with cilantro and serve with fermented soya paste (Tungrymbai) and Dohneiiong (pork with sesame seeds).
