Pongal Kootu
Recipe for Vegetable Kootu. This Kootu is mostly prepared on festival days, especially for Thiruvathirai and Pongal. This is also called as Pongal Kootu.

Instructions
  1. Take moong dal in a pan, cover with water and cook till done.
  2. Take grinding ingredients in a blender, add water little by little and make it into a smooth paste.
  3. Prepare veggies and wash them well. Now take them in a pot and add in salt, turmeric powder and water. Mix well. Bring it to a boil and cover and simmer the flame and cook for 15 to 20 mins till veggies are done.
  4. Once the veggies are done, add dal and coconut masala nd mix well. Simmer for a further 5 mins.
  5. Now make seasoning by heating oil and crackling the spices, pour this in to the curry and mix well.
  6. Serve with rice.
