Pasta Rosso with such a fresh touch. Perfect for a light lunch!
Instructions
  1. Heat oil in a saucepan and saute crushed garlic.Wait for the garlic to smell fragnant and add the sun-dried tomatoes, broccoli and rosemary- fry until fragrant.
  2. Add water, tomato paste and salt and pepper. Simmer for 5-8 minutes.
  3. Then add bell pepper and zucchini. Cook for another 2 minutes.
  4. Toss the pasta in. Remove from heat once combined.
  5. Sprinkle with freshly grated Parmesan cheese and add cherry tomatoes to serve.
