Although they share a name, unlike its soya counterparty, the mutton chaap is not skewered chunks of marinated meat cooked in a tandoor or on a grill. The dish is prepared in a heavy bottomed pan or kadhai with a light gravy. Alternatively, you can also make the chaap with chicken but we prefer red meat.
