Unless you live along the ghats or coasts of India, monsoon to you is what mint is to a mojito. Refreshing. And much needed. And what comes along with Monsoon (and with pretty much every other season, celebration and festival in India)? Food, of course.

Monsoon in India is synonymous with tea and fritters a.k.a. chai pakora. The most loved pakora being the pyaaz ka pakora. This one’s a widely binged-on favorite across the nation the moment one spots a grey cloud. Here’s how you can fry up a batch of crunchy onion pakoras.

Instructions
  1. एक बड़े कटोरे में प्याज़, बेसन, मैदा, अदरक, लाल मिर्च पाउडर, बेकिंग सोडी, धनिया पत्ती व नमक डाल कर अच्छी तरह मिला लें।
  2. धीरे-धीरे पानी मिलाँए ताकी प्याज़ पर बेसन के बैटर की एक सामान परत चढ़ जाए।
  3. एक कढ़ाई में धीमी आँच पर तेल गरम करें जब तक उसमें से धुआँ उठने लगे।
  4. थोड़ा सा बैटर कढ़ाई में डालकर तेल की गरमी जाँच लें।
  5. अब मुट्ठीभर बैटर लेकर पकौड़े तलें। ऐसे हिस्सों में पकौड़े तल लें।
  6. तेल से निकाल कर नैपकिन पर रखें ताकी अधिक तेल निकल जाए।
  7. चटनी के साथ परोसें।
