Instructions
  1. Heat the oil in a medium saucepan.
  2. Add the onion and cook until softened and starts to turn golden. Add the garlic towards the end.
  3. Stir in the sugar, chipotle paste and tomatoes.
  4. Put the chicken into the pan, spoon over the sauce, and simmer for 20 minutes until the chicken is cooked.
  5. Remove the chicken from the pan and shred with 2 forks, and mix again with the sauce.
  6. Garnish with a little red onion, coriander.
  7. Serve with remaining red onion along with tortillas or rice.
