Instructions
  1. To begin making the Mavinakayi Chitranna Recipe, we will first begin by preparing the rice.
  2. If you don't have day-old rice, cook your rice till fluffy, spread it out in a wide plate and allow it to cool completely. This helps in ensuring the rice doesn't get soggy, sticky and clumpy.
  3. Next, warm a teaspoon of oil in a heavy bottomed wok or kadai. Add the mustard seeds, chana dal, split urad dal, peanut and toss gently till it all crackles and the urad dal is lightly browned.
  4. And then add chopped onion and Add in the curry leaves, asafoetida, turmeric and slit green/red chillies.
  5. To this, add the grated raw mango, salt and toss vigorously till the grated raw mango softens and wilts a little bit.
  6. Once the mangoes have softened, add the cooked rice to it, mix it all together and toss on a low heat for 7-10 minutes till it is all well combined Taste and adjust salt, add more raw mango if required if you like it to be more tart. Stir in the chopped coriander leaves and serve warm.
  7. Serve the Mavinakayi Chitranna (Spiced Raw Mango Tempered Rice) along with a Raita of your choice for lunch or even for dinner. The Mavinakayi Chitranna makes a great picnic lunch too.
