Idlis are a multi-purpose snack. You can have them as if with a bowl of sambhar and some chutney, or you whip up the leftovers with an added bunch of spices and veggies and voila, just like that you get a whole new dish to snack on! This “new dish” is also known as stir-fried idli (a.k.a. Idli Fry) or masala idli. Though similar, the two are a little different. The stir-fried version is dry, while the latter is a tad more moist and spiced up.

We’ll be taking about the spicier and jazzier masala idli today. The dish is an excellent evening snack, whilst doubling up as a main meal as well if you add a few more veggies. Follow this recipe to whip up a quick masala idli within minutes!

Instructions
  1. Cut the idlis into bite-sized pieces and keep aside.
  2. Heat oil in a pan and crackle the cumin seeds.
  3. Add ½ teaspoon ginger-garlic paste and sauté till the raw aroma goes away.
  4. Now add the onions and sauté till the onions turn translucent or a light brown.
  5. Now add finely chopped tomatoes and green chili and sauté till the tomatoes soften.
  6. Then add a pinch of turmeric powder, red chili powder, pav bhaji masala, and salt to taste. Mix well.
  7. Add water and simmer till the gravy thickens, about 2 minutes.
  8. Now add the chopped idlis. Mix well.
  9. Switch off the flame and finally add chopped coriander leaves and mix well.
  10. Serve hot.
