Ending a meal on a delicious creamy note, what do you say? Yes, we’re talking about the Indian ice cream, kulfi. Malai kulfi to be exact. This version of the frozen dessert does not call for any additional flavors, just plain and simple creamy goodness with a dash of almond, pistachio and saffron.

Instructions
  1. In a bowl, blend ground blanched almonds, condensed milk and cream together.
  2. Infuse milk with saffron and add the mix into it.
  3. Toast some pistachio and chop them coarsely.
  4. Add pistachio into the existing mix and blend them well together.
  5. Set the blend in a matki (a small claypot) and cover with butter paper or place them in kulfi/popsicle moulds.
  6. Refrigerate and serve cold.
