Chocolate Mousse Recipe

    1. Whisk the egg yolks, sugar and a little salt together.
    2. Heat ¾ a cup of the cream in a heavy saucepan.
    3. Pour the cream into the mixture and stir until the mixture reaches a temperature of 160F.
    4. Pour the custard through a fine mesh sieve.
    5. Add the vanilla.
    6. Melt the chocolate and then stir in the custard.
    7. Beat the remaining cream with an electric mixer until it forms peaks.
    8. Add a quarter of the whipped cream to the custard.
    9. Stir in the remaining cream.
    10. Place the mousse into serving glasses and then chill for 6 hours.
