This is the first thing I ever made that had confectioners’ sugar in the crust. I could eat this crust all by itself! Our youngest daughter, Allie Colleen, is the aspiring cook in our family, and this is one of her specialties.

Instructions
  1. Preheat the oven to 350°F. Spray a 9 × 13 × 2-inch pan with cooking spray.
  2. In a medium saucepan, melt the butter. Remove from the heat and add the flour and confectioners’ sugar, mixing until a dough forms. Press the mixture firmly into the pan. Bake the crust for 25 minutes.
  3. While the crust is baking, with an electric mixer, combine the eggs, lemon juice, and zest until smooth. Add the granulated sugar, flour, baking powder, and salt, and beat until smooth. Pour the mixture over the baked crust. Bake for 25 minutes more. Remove the pan from the oven and let it cool completely. Sprinkle the top with confectioners’ sugar. Cut into squares and serve.
