Instructions
  1. Cut up the eggplants into slices.
  2. Soak the slices in the water.
  3. Roast all the roasting and grinding ingredients into golden brown color.
  4. Grind it into a fine powder.
  5. In a pan, add oil and mustard seeds and when it crackles add the eggplant.
  6. Add salt, turmeric powder and this spice powder. Mix well and keep the flame medium low.
  7. Stir in between and let it cook for 10 to 15 minutes.
  8. Once it gets cooked and roasted switch off the flame.
  9. Garnish with curry leaves.
  10. Serve.
