Kalkandu Pongal Recipe
A rich sweet rice recipe made using rock sugar (kalkandu).

Instructions
  1. Boil milk and rice in a pressure cooker along with moong dal for one whistle (approx. 12 minutes).
  2. After the steam has been released, open the pressure cooker and mash the rice well.
  3. Crush the rock sugar to smaller pieces and powder it using a grinder or food mixer.
  4. With the rice on medium flame in the pressure cooker, add the sugar allowing it to melt and stir in a tablespoon of ghee.
  5. Roast the cashews, clove, and nutmeg and powder the nutmeg and cardamom separately.
  6. Add it to the rice along with the saffron strands.
  7. When the rice turns thick, add the remaining ghee and roasted cashews and stir well.
  8. Remove from flame and allow it to cool. The mixture will begin to thicken once cooled.
  9. Serve with a tablespoon of ghee and enjoy!
