If You Like Pina Coladas…

Nothing says summer vacay like sipping a delicious Pina Colada on the beach. Unfortunately, for us grown ups in the real world, the summer doesn’t necessarily translate into to beach trips (at least for the majority of us). But have no fear with this simple and delicious recipe you’ll be able to transport yourself (at least in your mind) to a sunny summer’s day with a Pina Colada in your hand and not a worry in the world. If you’ve got a blender and a few basic ingredients you’ll be able to make every day (well probably not every day) fun in the sun!

Pina Colada Recipe
In this version of the Pina Colada, I took a trick from my mum and swapped out the coconut cream for ice cream and added Malibu rum for the coconut kick - twice the sugar, twice the fun!

Instructions
  1. Combine the rum, pineapple juice (you can sub in 3 ounces crushed—or whole—pineapple), and ice cream in a blender.
  2. Blend on high with 5 or 6 ice cubes.
  3. Pour into tall glass. Garnish with the cherry and/or pineapple. And there you have it! Vacation in a glass!
