Hop Hop
String hoppers or idiyappam is a rice dish from South India. It’s a snack, dessert and breakfast in various parts. It’s light and bland, but absolutely addictive.

  1. Dry roast the rice flour for 2 mins, sprinkle the salt over it and set aside.
  2. Bring water to a boil in a saucepan.
  3. Remove from heat and add half the boiling water, slowly the rice flour.
  4. Mix with a wooden spoon until the dough comes together.
  5. Add more water until the dough looks more wet than dry, still stirring. Keep yourself from adding all of it.
  6. Knead with the hands to form a soft dough.
  7. Grease an idiyappam press.
  8. Feed dough into the press.
  9. Take your steam plate and slowly press out swirls from the outside to the inside.
  10. Steam for 12-15 minutes.
  11. Serve hot.
