The Jackfruit is King!
Celebrate the deliciousness that is Kerala cusine with this jackfruit thoran!
freshly grated coconut

For the seasoning
a few curry leaves
Cut, peel and chop the jackfruit.
Put the jackfruit pieces in a pressure cooker with a little water and a pinch of turmeric powder.
Cook the jackfruit in the cooker for two to three whistles.
Grind the coconut, and green chilies together. Keep aside.
Once the jackfruit is cooked and cooled, mash the pieces gently with a wooden spoon until they break down.
Fry the mustard seeds, urad dal, red chillies and curry leaves in the oil for a minute. Add the jackfruit pieces and sauté for a minute.
Stir in salt to taste, and then mix in the green chilies and coconut paste.
Add a teaspoon or two of coconut oil to the thoran and stir well.
Remove from the flame and enjoy!
