Tea, a.k.a. chai (NOT chai latte), makes up for a vital part of the Indian household. Whether it’s a winter-special ginger tea, a delicious masala chai, or a simple sweet tea, there is a special spot for each in the tea-drinkers’ heart. And if the deliciousness and calming effects of the hot beverage are anything to go by, it is of utmost importance that everyone knows how to whip up a cup of calming homemade chai at all times.

Instructions
  1. Combine the ginger, cinnamon, peppercorns, cloves, and cardamoms in medium saucepan.
  2. Using the back of large spoon, lightly crush or bruise spices.
  3. Add 6 cups water; bring to boil over high heat. Reduce heat to medium-low, partially cover pan, and simmer gently 10 minutes.
  4. Remove from heat and add tea bags and steep 5 minutes. Discard tea bags.
  5. Add milk and sugar. Bring tea just to simmer over high heat, whisking until sugar dissolves.
  6. Strain chai into teapot and serve hot.
